Chocolate Orange Power Balls
These no-bake power balls pair rich cocoa with fresh orange zest. Dates bind the mixture and provide sweetness, while oats and nuts add texture.
Ingredients
- 1 cup soft, pitted dates
- 1 cup rolled oats
- 3/4 cup almonds or cashews
- 2 tablespoons unsweetened cocoa powder
- Finely grated zest of 1 orange
- 2 tablespoons fresh orange juice, plus more if needed
- 1/2 teaspoon vanilla extract
- A small pinch of salt
- Desiccated coconut or additional cocoa powder for coating, optional
Method
- Add the oats and nuts to a food processor. Pulse until they form coarse crumbs.
- Add the dates, cocoa powder, orange zest, orange juice, vanilla, and salt. Process until the mixture begins to clump together.
- Test a small amount between your fingers. If it is too dry to hold its shape, blend in additional orange juice one teaspoon at a time. If it is too sticky, add a few more oats.
- Roll tablespoon-sized portions into balls. Coat them in coconut or cocoa powder if desired.
- Chill for at least 30 minutes before serving.
Storage
Keep the power balls in a covered container in the refrigerator and consume within one week. They may also be frozen for longer storage; allow them to soften briefly before eating.
Useful Variations
- Nut-free: Replace the nuts with sunflower or pumpkin seeds.
- More texture: Stir cacao nibs or finely chopped dark chocolate into the finished mixture.
- Stronger orange flavor: Add more zest rather than excess juice, which can make the mixture too wet.
