Espresso Overnight Oats with date caramel
Is your mouth watering? When I discovered the recipe on Fit Foodie Finds , I knew right away that I needed to make my own version of Espresso Overnight Oats with Date Caramel! No matter what it is - when "Salted Caramel" is on it, I have to eat it! I love the combination of sweet and salty and always sprinkle a pinch of salt over my dessert to add some sweetness to the sweetness.
In my Breakfast Meal Prep Post have already explained in detail my routine for my weekly breakfast. I still go through this routine and prepare my breakfast every Sunday for Monday through Friday. So I save time in the morning and wake up with the idea of warm, creamy Oats!
For me, planning my Overnight Oats in a calorie counting app like MyFitnessPal is easy. I tend to "eyes bigger than the stomach" and often invite me to big portions on my plate. With the app, I can plan exactly how many calories I'm doing well in the morning, without feeling too full (about 420-450 kcal).
With this method, I can also get my snacks ( about 200 kcal):
(The target calories are now at 1,800 since I'm doing more strength training)
Espresso Overnight Oats with Date Caramel Recipe
1 snack serving, about 200 kcal (just double for breakfast!)
For the Oats:
- 30 g of oatmeal
- 3 g of flaxseed (ground)
- 1 espresso or 1 tsp instant espresso powder
- 1/2 tsp cocoa powder
- 50 ml whole milk
- 1 Msp. ground vanilla
For the salted date caramel:
- 1 date (pitted)
- some water > li>
- 1 pinch of coarse sea salt
Instructions
- Mix oatmeal, flaxseed, espresso, cocoa powder, milk, vanilla and honey and place in an airtight container It is best to leave it in the fridge overnight (but at least 2 hours).
- Place the date with a tablespoon of water in the grinder and purée until a cream is formed.
- Before serving stir the oats once, top with a dollop of date caramel and a pinch of sea salt and enjoy!
