Pseudo cereals
After the 10,827th oatmeal breakfast I was looking for something new. Only the same thing gets boring in the long run and maybe there's an alternative to oatmeal, which will fill you up or taste better!
Be on my green super-food blogs I came across so-called pseudo cereals very fast. A quick look at Wikipedia reveals that while pseudo cereals do not belong to the grass family, they are used as cereals. The sacred trinity of pseudo cereals are:
quinoa, buckwheat and amaranth.

Those of you who suffer from celiac disease know certainly long since the grain alternatives, because they do not contain gluten. But otherwise Quinoa and Co. by the current clean-eating hype more popular and even pull in my home Rewe. BTW: W he would have ever thought that you can buy f * cking CHIASAMEN at ALDI?!
In addition, quinoa, buckwheat and amaranth contain more protein > strong> than normal wheat. But the three pseudo cereals also have about 60 g of carbohydrates per 100 g, so they are not suitable for a pure low carb diet.
For me, quinoa, buckwheat and amaranth are therefore not super-food Wonder Weapons, but an alternative to oatmeal and a tasty side dish. I also noticed that they fill me up longer than, say, classic white rice.
Quinoa
Consistency : Small grains about half the size like a grain of rice
Preparation : Rinse thoroughly and bring to boil with 2 parts water and simmer for 20 minutes covered. Let it swell for 5 minutes.
The classic of the new German super-food kitchen! Quinoa is a great alternative to travel and even tastes skeptics, as long as you wash it thoroughly before cooking. I especially like quinoa with some nut butters and lime juice. The pseudo cereal contains all the essential amino acids that the body needs.
Buckwheat
Consistency: Tough, large grains p>
Preparation: Rinse thoroughly, bring to boil with 2 parts water and simmer for 15 minutes.
My rediscovery for breakfast. Oatmeal and quinoa were just too mushy over time. Buckwheat has a slightly firmer texture that gives the poundage texture. So you finally have something to chew! I've also made buckwheat into flour with my new Power Shredder * , making pancakes. Works great, but you should note that pseudo cereals are rather unsuitable due to the lack of gluten for baking.
Amaranth
Consistency: like porridge/polenta
Preparation: Rinse thoroughly, boil 2 parts of water and simmer for 25 minutes.
Amaranth is completely wrong in the shade of quinoa! Like quinoa, the pseudo grain contains all the essential amino acids and even more protein. For me, the grain is still new territory. I have recently processed it together with buckwheat for breakfast and will use it as a polenta alternative! What I can well imagine is, for example, amaranth-filled peppers!
I'm now cautious about exuberant "super-food" promises. I want to encourage you to try quinoa instead of the thousandth rice dish. Cooking should be fun and our taste buds are grateful if we offer them something new from time to time!
