Coconut Lime Macaroons are my new cleaner snack favorite for the Summer!

They not only taste tropical, fruity and light, they are also made quickly and can last up to 10 days in the fridge. Aside from the optional chocolate coating (which I heartily recommend to you!), The coconut lime macaroons are a great low carb snack because they're all fat.

You can either enjoy them as a small snack or you crumble it over your porridge in the morning or over your sundaes in the evening.

The limes make the macaroons nice and fresh and light and are a perfect match to coconut. I'm adding lime to every recipe right now and am currently addicted to the sweet and sour little citrus fruits!

Coconut lime macaroons recipe

Ingredients for about 10 pieces

ca. 85 kcal/piece

  • 100 g of grated coconut
  • 2 egg whites
  • 1 pinch of salt
  • Juice and peel of a lime
  • 1 teaspoon vanilla paste
  • 1 teaspoon coconut oil
  • for decoration: 20 g dark chocolate and 1 tbsp coconut fat
  • Instructions

    • Preheat the oven to 180 ยฐ C convection.
    • Beat the egg whites with salt. the grated coconut, lime juice and peel, honey, vanilla paste and melted coconut oil.
    • Lift the egg whites under the coconut mixture and leave to soak in the fridge for 30 minutes.
    • A baking tray with Lay out parchment paper.
    • Next, make your walnut to table tennis balls and lay them on the baking sheet.
    • Bake for about 10-12 minutes until the edges are golden brown.

    Notes

    If the mass is too dry and does not want to stick, you can add a dash of coconut milk. Or Batida de Coco ๐Ÿ™‚
